For the vinaigrette:
3 tbsp olive oil (uninfused - can use vegetable oil as well)
1 1/2 tbsp balsamic vinegar (white balsamic vinegar works too)
1/2 tsp dijon mustard
1/2 tsp honey
1/4 tsp minced garlic
1 basil leaf, chopped
1 pinch red pepper flakes
Salt & pepper to taste
0.50mL serving of Terrene Infused Olive Oil
For the salad*:
1 can chickpeas, drained & rinsed
1/2 cup quinoa
2 cups mixed field greens
1 cup grape tomatoes, halved
2 cucumbers, chopped
1 yellow bell pepper, chopped
1/2 cup pitted Kalamata olives
1/2 cup hummus
*Veggies are totally customizable!
Place all ingredients for vinaigrette into a resealable container (a mason jar works great!). Shake vigorously until homogeneous. Pour over chickpeas and marinate for at least an hour. While chickpeas marinate, cook quinoa according to instructions on box.
To assemble the salad, layer greens in the bottom of a bowl. Arrange the grape tomato halves, cucumbers, bell pepper, olives, chickpeas, and quinoa in sections around the bowl. Spoon the hummus in the middle. Drizzle remaining vinaigrette over entire salad.
Grab a fork and enjoy!

2 cloves garlic
1 (19 ounce) can garbanzo beans, half the liquid reserved
4 tbsp fresh lemon juice
2 tbsp tahini
1 tsp salt
Salt and black pepper to taste
2 tbsp olive oil
1 serving of Terrene Olive Oil (use the graduated dropper to get your preferred dose)
1 tsp zaatar (or cumin)
Add the garlic and garbanzo beans into a food processor. Process until roughly chopped.
Add in your reserved garbanzo bean liquid, lemon juice, tahini, olive oil, Terrene olive oil, and salt/pepper. Blend until creamy and well mixed. You can add in ice water in tablespoon increments to create a creamy texture, if you’d like! Taste and adjust seasonings. To serve, transfer the mixture to your serving bowl, drizzle with olive oil and sprinkle with zaatar. Serve with veggies or pita bread! Makes 2.5 cups of hummus.
